I had a cookie emergency this weekend and needed to whip these up to feed some hungry friends. This recipe produces an extremely chewy cookie that stays fresh for several days.
Ingredients
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup butterscotch chips
2 cups oats
Instructions
Preheat oven to 350 degrees. In a small bowl mix together flour, salt, baking powder, and baking soda. Set aside.
Cream butter and sugars. Add egg.
Stir in butterscotch chips and oats.
Drop tablespoonfuls of dough onto a cookie sheet lined with parchment paper. Bake for 12-14 minutes until golden brown.
Yields 24 cookies.
