Peanut Butter Butterscotch Cookies


This was my first time trying this combination, and it worked splendidly. The applesauce makes the cookies a bit more cakey, but I could not taste even a hint of applesauce. If you don't have butterscotch or prefer chocolate chips, you can make the substitution or go with no additions. The peanut butter base is very flavorful on its own.


Ingredients
1/8 cup butter
1/2 cup sugar
1 egg
1/2 cup peanut butter
1/4 cup unsweetened applesauce
1/2 teaspoon baking powder
1 cup flour
1/2 cup butterscotch chips 


Instructions
Preheat oven to 350 degrees.
Mix butter, sugar, and egg until well-combined. Mix in peanut butter until smooth. Add in applesauce and baking powder. Gradually mix in flour. Stir in butterscotch chips.
Drop tablespoons of dough onto greased cookie sheets.
Bake for 12-15 minutes until lightly browned.
Yields 18 cookies.

  1. Mmmm, i bet these are decadent and delicious. With the use of applesauce, you can even pretend they are slightly healthy... okay, maybe not LOL, but they look yummy!
