Peanut Butter Cookies

This Betty Crocker recipe was the perfect way to use up a jar of peanut butter and a bag of peanut butter chips. This is going to be my go-to peanut butter cookie recipe for sure. It came together quickly and produced a chewy peanut butter cookie with just the right amount of sweetness. The recipe said to roll the dough in sugar before baking. I skipped that step and don't think I missed out.

Ingredients
1 cup packed brown sugar
1/2 cup peanut butter
1/2 cup margarine, softened
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup peanut butter chips

Instructions
Preheat oven to 375°F. In large bowl, beat brown sugar, peanut butter, butter and egg until creamy. Stir in flour, baking soda, baking powder and salt. Stir in peanut butter chips.
Shape dough into 1 1/2-inch balls.Place balls, sugared sides up, about two inches apart on ungreased cookie sheet (do not flatten).
Bake cookies 10 to 12 minutes or until light brown. Cool 5 minutes; remove from cookie sheet to wire rack.
Yields 2 dozen.
