Banana Almond Jumbles

I'm going to spend about 20 hours flying this week and want a cookie that will keep me energized and full so I'm not stuck paying for overpriced, unhealthy airport food.

I used a very ripe banana, almonds, and oats to make a satisfyingly chewy cookie with some crunch. Mini chocolate chips and raisins would make great additions as well. You could also mix in crunchy peanut butter if you prefer.

What snacks do you bring when you travel?


Ingredients
1/4 cup brown sugar
2 Tbsp tub margarine
1 banana, mashed
1 egg white
1/2 cup almonds, chopped
1 cup wheat flour
1 cup rolled oats


Instructions
Preheat oven to 350 degrees. Cream together brown sugar and margarine. Add banana and egg white. Mix well. Stir in almonds and oats.
Drop heaping tablespoons of dough onto a cookie sheet, and bake for 12-14 minutes until light brown.
Remove cookies from the pan and cool on a rack.
Yields 18 cookies.

  3. OMG 20 hours in a plane I would need more than just cookies!! This recipe does sound good, but I love just about any cookie that has oats and brown sugar!

  5. 20 hours of travel? Oh gosh, I don't envy that.
    Well with the plane restrictions and all I'd probably take things like granola bars, nuts, dried fruit... be careful with salt though, if you have too much salt on a long flight you are more likely to experience bloating and problems with your feet (i know from experience).
    I love your little banana snack. Looks yummy.

  6. Wow! That's a serious lot of travel. I hate long layovers and feeling forced to eat at the airport...it's so expensive! These cookies look like a delicious way to fight back. Thanks for the recipe and hope you have safe travels :)

  9. I have 3 daughters - two in high school and one in middle school. They are usually grabbing breakfast as they walk out the door. I think they would love these - can't wait to try!
