I have been working on a good coconut macaroon recipe for a long time, and this is the best I've made so far. It is also one of the easiest. Let me know what you think and if you know of another macaroon recipe I should give a try.
Ingredients
5 cup coconut, shredded
2/3 cup flour
1 can (14 oz) sweetened condensed milk
1 egg white
1/4 teaspoon salt
1 teaspoon vanilla extract

Instructions
Preheat oven to 350F.
Measure and mix coconut and flour in a large mixing bowl. Add in condensed milk, egg white, salt, and vanilla. Mix throughly. Drop 1/8 cup scoopfuls on to a cookie sheet. Bake for 18-20 minutes until golden brown. Remove from cookie sheet immediately and allow to cool on a wire rack.
Yields 24.
I love macaroons, and these look perfect. But I might be tempted to dip them in dark chocolate... yum!

ReplyDeleteI made these last week and they were a complete hit! They were super easy and just awesome! I was tempted to dip the bottoms in chocolate or drizzle some on but I was off to a party and didn't have time. They certainly didn't need it at all.
