Lemon Cake Mix Cookies


Unbelievably delicious! They make your kitchen smell great, too. 
These cookies were a breeze to make and opened the door to a world of endless possibilities- devil's food cookies, red velvet cookies, carrot cake cookies... Of course, you have to like soft, cake-like cookies. I used Duncan Hines Lemon Supreme cake mix, but any regular-sized box of cake mix will work.

Ingredients
1 package lemon cake mix
2 eggs
1/3 cup vegetable oil


Instructions
Preheat oven to 375 degrees.
Combine all ingredients in a large bowl and mix.
Drop tablespoonfuls of dough onto an ungreased cookie sheet.
Bake for 12 minutes.

Yields 3 Dozen.

  2. This sounds so simple! Have you tried using other cake mixes? I'd love to try red velvet cookies. Perfect for valentine's day!

    1. I have tried a similar recipe with red velvet, chocolate, and yellow/white cake mix cookies. All flavors were very good. I chose to make sandwich cookies out of them, using cream cheese frosting for the red velvet and chocolate cookies, and chocolate frosting for the yellow/white cookies. (I doubled the recipe, so I used one Pillsbury white mix and one Pillsbury yellow cake mix.)

      My recipe calls for shortening instead of oil. I found using my cookie scoop, cutting the scooped dough in half, produced the perfect sized cookie. Baked at 350 for 10 minutes on parchment paper.
