Rich Chocolate Chocolate Chip Cookies


This is the best cookie recipe I have made in a while. Adding melted chocolate chips to the batter brings a richness that cocoa powder cannot. Not only do these cookies taste great, but they are really fast and easy to make since you do not have to wait for butter to soften. Don't skip refrigerating the dough, though.


Ingredients
8 ounces semi-sweet chocolate chips
4 tablespoons unsalted butter
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup semi sweet chocolate chips

Instructions
Preheat oven to 350 F. Line two large baking sheets with parchment paper.
In a microwave safe bowl, combine the 8 ounces of chocolate chips with the butter. Heat in microwave until almost melted.
In a small bowl, whisk together the flour, baking powder and salt.
In a large bowl, beat eggs, brown sugar, and vanilla together until the mixture is light and fluffy (about 3 minutes). Slowly add the melted chocolate, and mix until well-combined. Fold in dry ingredients until just combined. Fold in chocolate chips. Refrigerate the dough for 15 minutes.
Drop rounded tablespoons two inches apart on the lined baking sheets. Bake 12-15 minutes. 
Yields 2 dozen cookies.
